I think I over did this. Not often do I produce a wort and look at the sight glass and and realize something had gone horribly right. My efficiency on this went big. I thought the extra 3 pounds of malt would give me a boost, but I didn’t expect it to be this much. This beer may turn out big with a starting gravity of 1.06. I used a different yeast than I usually put into this to add some exotic Belgian flavors to it. Same beer, different bitter hops and kicked up a notch. I can safely put this down to more practice with the craft I love and cherish. I added 1oz Tettnanger at 45 of the boil and half that for Saaz at 15 and flame out.

I have been a fan of Stone Dayfall for a while and I wanted to pay homage to this great beer. I found several great recipes and settled on something I think would hit a similar spot. Amarillo and Cascade hops to round out the flavor with orange peel and coriander.

A new year deserves a new beer. I was able to get this recipe together after the celebrations died down and I brewed this with a lot of enthusiasm. This would help me celebrate brewing for 3 years just about every week. A fitting beer to start the year off.

A new twist on one of my favorite clone beers. I tried out some Bohemian malt that could add a lighter and cleaner flavor than US Pale Malt that I previously used. Came out very well in the end with some East Kent Goldings and Czec Saaz hops.

This was one of the most challenging beers to get to taste right. I feel like this batch really did it justice. I refined my technique and it showed. A 1/2 oz EKG at 45 of the boil and the same for Saaz at 15 and flame out.

A different take on the last Wit beer that was more of a fruited Hefeweizen. We used Golden Promise and some interesting malts to help this one get a better fruity flavor. A really foamy Wheat beer that stood out as a great smelling brew. Then we waited a week after it sat on Hefeweizen yeast and added 2 cans of Boysenberry puree to the mix for extra fun.

My first HoeGaarden clone. I brewed it with orange peel and coriander. The pale malt I used was a step up from the ordinary that I usually have for my brews. I wanted to make something special. It seems I did. I need to make another one of these beers. So good! I used Mt Hood hops and Saaz to keep a european flavor with a twist of Oregon.
