The Holidays always get me sentimental about beers of Holidays past. With the glut of 2-Row that I have, I wanted to re-create a favorite to see how the different grains affect the flavor. The 2-row I ground up and it smelled like marshmallows and bread. Good grain makes good beer, I intend to find out. I used 1 oz of Styrian Golding hops at 45 minutes and then used Saaz at 10 minutes, changing the flavor from previous versions. I’m interested in the change. SafAle 05 yeast always gets me a great result. I am confident I will get a great result.

I took this back to basics and challenged myself to make a Lager with 2-row. I let the ingredients do the talking for me and see how it will turn out. When I milled the grain it smelled like marshmallows. I hope the beer turns out similarly.

I boiled for 90 minutes. I did an ounce of Tettnanger at 60 and an ounce of Hersbrucker at 20.

I was gifted some 2 Row and I thought I would go out and get a few ingredients and see if I could whip something up really quickly. Seat of the pants-type stuff. Really pushing the boundaries. I went into my local brew shop and told them that I had a ton of 2 Row and wanted to make a stout. 1 0z of EKG in at 60 and 20 mins. SafAle 05 and into the fermentation fridge. November should be a great time to crack open one of these.

A new bier to celebrate Oktoberfest is what the need calls for these days. I recently was gifted some grain and I wanted to put it to the test.

I kept the boil to 60 minutes and forgot to add the hops in until 30 minutes left with the boil. I did a half ounce at 30 and another half of Hersbrucker at 20.

Re-brewing this tasty treat. I wanted a light lager to serve at a birthday. This would fit the bill for me to have something lager-ish to serve. I really enjoyed how light this was and how easy it was to brew. A 1.052 original gravity. Added Chinook at the 60 min mark of a 90 min boil and finished off with some Hallertau.

I wanted to make a very drinkable Pale Ale for my 4 friends who are turning 40 this year. We will be drinking this beer to celebrate. The recipe has a more aggressive hop schedule than I usually brew. I’m not a fan of overly hoppy beers, and I cut the amount of hops in half for my own taste. First wort hop of 1oz of Cascade goes in at 60 then 1.5 oz at 10 mins with .5 oz Cascade, 1 oz Citra, and 1 oz Mosaic in at flame out. Hoping for some good fortune!

The last brew of this went really well. With the next installment I wanted to use a new Lager yeast to enhance some of the roasty notes of this beer. A great roasty smell from the boil just lit up my senses. I hit this at 1.059 and it should turn out to be a 6% lager. I switched up the boil and left it to 60 mins. Hersbrucker hops in at 45 and 20 minutes. I’m glad I got this done in the morning before the heat of the sun kicked in.

I think I over did this. Not often do I produce a wort and look at the sight glass and and realize something had gone horribly right. My efficiency on this went big. I thought the extra 3 pounds of malt would give me a boost, but I didn’t expect it to be this much. This beer may turn out big with a starting gravity of 1.06. I used a different yeast than I usually put into this to add some exotic Belgian flavors to it. Same beer, different bitter hops and kicked up a notch. I can safely put this down to more practice with the craft I love and cherish. I added 1oz Tettnanger at 45 of the boil and half that for Saaz at 15 and flame out.

I re-made this beer after experimenting with different water. I needed an old friend to come back and reaffirm my practice to the craft of making beer. The grains on this really give me a sense of pride when I make this beer. I love Maris Otter and how sweet it gets to balance the others. I have a favorite cold brewed coffee I love and I wanted to make it shine. I stuck to the routine on the boil with some Warrior at sixty minutes and EKG at five minutes. 24 oz of cold brew in the keg after fermentation.

I was privileged enough to partner with a local water company and get some RO water for my brew. Free anything is much appreciated in these times. So I used some free Ale yeast from my local brew club to hit two birds with one stone. I also changed up the recipe to make this a little less roasty with only 1 lb of Special B. I will be adding the hops at the usual time 45 and 20 minutes. Chinook and Simcoe are the hops used to make this a great drinking Red Ale sure to please.
